A More Flexible HotpotExperience for Diverse Dining Needs

随着餐饮消费日趋多元,火锅体验也需要回应更多不同的用餐方式。除了周全细致的贴心服务,当下消费者也期待更自在随心、能够按自己的节奏选择与组合的用餐空间。

As dining preferences become increasingly diverse, hotpot experiences need to respond to a wider range of ways of dining. Alongside thoughtful and attentive service, today’s consumers also look for spaces that feel more relaxed and self-directed, where they can choose and combine according to their own rhythm.

海底捞大排档火锅,正是在这样的变化中,为火锅找到一种更符合当代需求的新方式。

Haidilao Dai Pai Dong Hotpotresponds to this shift by exploring a new way of making hotpot more relevant to contemporary dining needs.

大排档的市井烟火气

The Everyday Energy of Dai Pai Dong

设计从“大排档”的饮食文化中提取随意、灵活、热气、吆喝与市井感。大排档的核心不是粗糙,而是人间生活的真实感:接地气、人情味、没有束缚。项目概念由此形成——「市井×火锅场×自在嗨」,让“看得见的热度、闻得到的香气、听得到的喧闹”共同构成新的火锅体验。

The design draws from the food culture of the dai pai dong: casualness, flexibility, heat, street calls, and a strong sense of everyday urban life. The essence of dai pai dong is not roughness, but authenticity — grounded, human, and unrestrained. From this, the concept was developed:“Street Market × Hotpot Field × Free Social Energy,”creating a hotpot experience that can be seen, smelled, and heard.

在餐饮模式上,新鲜食材被直接摊开展示,顾客可以按需自取、各取所需;菜品以小单位计价,回应当代消费者对口味与份量的自我定义。

In terms of dining format, fresh ingredients are displayed more directly, allowing guests to pick what they need. Dishes are priced in smaller portions, responding to contemporary preferences for personal taste, portion control, and flexible combinations.

个人小锅的设置,让一人食、两人食、多人聚餐都可以成立,也减少了传统火锅必须迁就彼此口味的绑定感。

The individual hotpot format supports solo dining, meals for two, and group gatherings, reducing the need to compromise on flavour in a traditional shared hotpot setting.

空间并不复制传统大排档的户外烟火气,而是将其转译为更干净、更有秩序、四季皆可使用的室内火锅场。

Rather than simply replicating the outdoor atmosphere of a traditional dai pai dong, the design translates it into a cleaner, more orderly indoor hotpot environment that can operate year-round.

热闹烟火中的清爽秩序

Fresh Order Within Lively Energy

这种“冷”与火锅本身的“热”形成反差:火锅带来温度、香气与人情味;蓝色、金属与灯光系统则带来清爽、明快与安全感。设计希望保留大排档的热闹,同时过滤掉传统街边环境中可能出现的脏乱与不安,让顾客在火热的烟火气中,也能安心、轻松地吃锅。

This sense of “coolness” is not distant, but forms a contrast with the heat of the hotpot. The hotpot brings temperature, aroma, and human warmth, while blue tones, metal surfaces, and lighting create a sense of freshness, clarity, and safety. The design preserves the liveliness of the dai pai dong, while filtering out the disorder and unease often associated with traditional street-side dining.

在运营层面,空间通过主通道、用餐区、自选区、厨房与功能柜系统,保持清晰的客流与货运动线。自助小料台、保鲜柜、消毒柜、饮料柜、回收车与洗手池等被整合在不同区域,让顾客自助更顺手,也让服务人员可根据不同时段灵活调配。

Operationally, the space maintains clear guest and logistics flows through the organisation of main circulation, dining areas, self-service zones, the kitchen, and functional cabinet systems. Condiment stations, fresh-keeping cabinets, disinfection cabinets, beverage cabinets, recycling carts, and handwashing areas are integrated across different zones, making self-service more intuitive while allowing staff to respond flexibly to different operating periods.

与此同时,自选区、小料台、推车菜架及不同人数的餐桌系统,均以模块化方式研发,未来可根据不同门店的物业面积与客群结构重新排布,在维持品牌体验一致性的同时,提高展店效率与运营适配度。

At the same time, the self-service area, condiment stations, trolley racks, and table systems are developed with a modular approach, enabling future stores to adapt to different property sizes and customer structures while improving rollout efficiency and operational flexibility.

项目所在的万博商务区,集合商业、办公与住宅,是典型的混合型商圈。面对不同时间、不同人数与不同口味的用餐需求,海底捞大排档火锅以更灵活的空间和餐饮模式回应城市日常:看得见新鲜,涮得更随心;一个人可以吃得自在,一群人也可以吃得尽兴。

Located in the Wanbo CBD, the project sits within a typical mixed-use business district that brings together commercial, office, and residential communities. Responding to different dining times, group sizes, and flavour preferences, Haidilao Dai Pai Dong Hotpot uses a more flexible spatial and dining model to serve everyday urban needs: fresh ingredients in sight, hotpot at will; one person can dine with ease, while a group can gather with equal enjoyment.
